Mediterranean Pork Cutlets with White Beans, Tomato, Feta & Olives
WHITE BEANS, TOMATO, FETA & OLIVES
Begin by making a tomato base sauce. On medium heat place olive oil in a heavy based medium size pot and sauté onion and garlic until translucent. Approximately 5 minutes.
Add tinned tomato, and cook for 10 minutes stirring constantly.
Once reduced to the thick sauce.
Add cannellini beans and olives, cook for a further 5 minutes.
Stir through fetta cheese and oregano.
PORK CUTLETS WITH MEDITERRANEAN GLAZE
Remove all packaging and place cutlets into a greased low-medium heat fry-pan.
Cook cutlets for 7-8 minutes on each side, turning only once.

1 tin of Cannellini Beans (best quality available)
1 tin of Tomato
1 White Onion finely diced
2 Garlic Cloves crushed
10x Black Olives
½ packet Fetta Cheese
1 small handful of Oregano
50ml Olive Oil
Salt and Pepper
